Do I need to show the itinerary and accommodation booking to customs officers when entering Spain ?

We didn't check when we entered, it was very smooth.
A passport is enough. We won't look at anything else unless your luggage is checked.
Generally, just the passport is okay. It's better to avoid bringing meat products, as if your luggage is selected for a random scan upon exiting the airport (although the chances are small), confiscation is inevitable, and the fine depends on the mood of the officials. If you're not checked, then everything will be fine. I've seen a lady bring in two large boxes of waxberries without being checked, so it's all about luck.
Spain's entry is extremely fast, just look at the passport
