Can you self-drive to Granada and Seville in mid-July without booking a hotel in advance? Will you not be able to find a hotel temporarily ?

You should at least make a reservation on booking, otherwise how can you get a visa? You also can't pass through European customs.
It's best to book during the summer vacation, many hotels on booking can cancel reservations.
The issue of customs clearance is not a big deal. The Spanish customs feels very relaxed, and I didn't see anyone asking questions while queuing. It was very fast. Since you have a car, it's impossible not to find a place to stay. However, it's quite troublesome to find a hotel temporarily. The place you want to stay may be fully booked, and it's usually more expensive to book in advance. And Seville is really hot. I went there last week wearing short sleeves and shorts. I can imagine how hot it would be in the summer. It's really annoying to find a hotel on a hot day.
