If you want to have a lively experience, go to Lijingmen Ancient City in Luoyang after dark. The first shop you see when entering from the west side is it. There are many Bu Fan Tang shops in the old city, but only this one has long queues. If you don't have the courage to brave the crowds, you won't be able to taste it. It is called "Bu Fan Tang" because it adds mung bean noodles to the soup, which can keep it from boiling during the cooking process. In addition, it includes wood ear fungus, vermicelli, tofu shreds, and other ingredients. Compared to hot and spicy soup, it is relatively light. If you prefer mild flavors, give it a try.
