Hi, I have no experience of Road trip abroad, and my English level is also average. Will Road trip in southern France be very difficult? I'm worried about problems and being taken advantage of by car dealerships ?

Actually, the English navigation only requires you to know a few words, such as "traffic circle" and "exit". It will repeat something like "in 500 meters, there will be a traffic circle, please take the exit and enter Road XXX" or "turn left / turn right".

Best to find someone with good language skills to throw together, if necessary, prepare a mobile translation software, buy the most expensive car insurance claims, cultivate good driving habits, and rent a car to travel.

I am also very average in English, but I can understand road signs, and just follow the navigation. You don't need English to drive.
