I also drove from Kenting to Hualien, and I chose a hot spring hotel in Zhishan, Taitung.

The wheat fields in Shitou were about to be planted when I passed by on the 10th. So you can basically ignore Shitou. I stayed in Shitou for one night on my way from Kenting to Shitou and had the famous Shitou bento. It depends on when you are leaving Kenting. If you leave in the morning, it should be fine to have dinner in Hualien. We started out at around 2:00 PM, so we had dinner in Shitou. We also visited Duoli Station on the way, if I remember correctly.
