Will we not be able to find a place to stay if we don't book a hotel in advance when driving in southern France in mid-July with two children? Because if we think about booking later, we can stay longer in places that are fun ?

No problem at all, as long as it's not peak season, there are many hotel options.

Traveling with kids is totally different from traveling with adults. July is also the peak season for traveling in southern France.

Still need to reserve, but need to pay when you get to the store, and you can cancel at any time.

You can find a "free cancellation" reservation. Especially if you are traveling with children (or two), the itinerary and hotel arrangements must be secure. Adults can endure a night anywhere, but what if the children get sick? That would be even more annoying, wouldn't it?
