I have my driver's license translated. Is there a special oath document in France ?

I have an official court translator from Germany, who can help you translate the oath.
France doesn't need it. China and France have mutually recognized driving licenses. You just need a white booklet. To be more secure, you can do a notarization of the driving license at home. I did an English one. Except for Germany and New Zealand, you can rent a car with this.
This car rental is not used.
