Can anyone tell me if it's okay to pick up the car at Nice airport at 9 am, drive to Saint Paul de Vence, then go to Grasse, stay near Grasse for the night, and then drive towards Lake Sainte-Croix and Red Earth the next day in terms of route and time ?

No problem, don't leave too late the next day. It takes 2 hours from Grasse to Lac de Sainte-Croix, and over 2 hours from Lac de Sainte-Croix to Roussillon. You probably need to stay in Roussillon. The mountain roads are winding, so don't drive too fast. Also, when you arrive in Roussillon, it's best not to drive into the small town, as the streets are so narrow it's enough to make you cry.
If picked up on time, there shouldn't be any problems.
