Can anyone tell me whether it's better to exchange euros in advance in China or to withdraw them when I get there? Is there a big difference ?

It's better to exchange it domestically, as it's very inconvenient to do so abroad.

Just take dozens of euros outside, the domestic bank only gives you one large denomination of 100 or 500 euros, which is unusable over there. Credit cards are used throughout France, and cash is almost not used.

About right. 100-yuan notes from small stores can't be spent.
