Can someone in the UK currently using Google maps for navigation tell me if you are using a domestic Chinese sim card or a UK sim card you purchased locally ?

Google Maps doesn't work with domestic cards in China. I have two phones and specifically use one with a UK local card.

I'm using a UK card, and Google Maps works fine. I bought it on Taobao.
