I stayed at Hope and Sea Homestay in Hualien, which I booked on Booking. The whole family who run the place are very nice and they have a cute cat.

You can check related websites according to your own needs. The one I live in is called Ren'ai Xiaoguǎn. It's not bad except that it doesn't have an elevator. There are also many guesthouses that can only be booked online but need to be paid in cash offline.
