Do you think it is safe to rent a car in Paris and return it in Nice, going through Chambord, Chenonceau and Provence from April 21st to 26th? Will my luggage be stolen if I leave it in the trunk while visiting the scenic spots ?

It depends on luck. It's best to put the luggage in the trunk and make sure it's not visible from the outside. Open the storage boxes under the drawers and on the shift lever and leave them empty.
In my opinion, driving in Europe is more enjoyable than driving in China. It's more formal and fast, but you must yield to pedestrians.
I just took a trip to Nice, Monaco, Cannes, Grasse, Avignon, Saint-Remy, Arles, Nimes, Aix, Marseille, Stone City and Red Earth City. It's safe and the public security is good. The only issue is that the roads are a bit narrow and the cars drive fast, so you need to be more vigilant.
