Try the local specialty food when you go to Beijing, like "douzhi" with "jiaoquan". Douzhi may have a fermented pickled vegetable taste that some people may not like, but it goes well with jiaoquan pickles. Peking duck is sliced into three different types, with crispy duck skin and a nice texture when dipped in sugar. New steamed buns with sour radish are also delicious.
