It's best to exchange RMB for Turkish Lira in China. If not, exchange it for Euro. You can exchange Lira for Euro after landing in Turkey at the four-leaf clover ATM, and Euro is also widely used in Turkey. But it's not very cost-effective to pay directly in Euro.
