Can you tell me how much cash should we bring for an 8-day Road trip in New Zealand? We have already paid for the accommodations and transportation, and plan to use credit cards and mobile payments mainly ?

500 yuan is about enough, most places accept card payments, including gas stations, convenience stores, supermarkets, and cafes.

We drove for 14 days and spent more than 100 yuan in cash, while the rest was charged to our card.

I'm ready to bring over 2,000. That's enough.

Don't need to bring too much. Credit cards are generally supported. Mobile payments are indeed scarce. You can bring a few hundred NZD as backup. We only brought 800 NZD for the two of us for 20 days.

I heard that mobile payments are not all supported. It depends on your consumption. I think 2000 New Zealand dollars should be about right.
