500 yuan is about enough, most places accept card payments, including gas stations, convenience stores, supermarkets, and cafes.

Don't need to bring too much. Credit cards are generally supported. Mobile payments are indeed scarce. You can bring a few hundred NZD as backup. We only brought 800 NZD for the two of us for 20 days.
