We exchanged 700 euros during our 18-day trip to Europe, which was just right. You don't need to bring too much, depending on your own spending level. We usually use credit cards, unless we eat some snacks or take a taxi or buy tickets. You can use credit cards in most cases. If you like to take taxis during your trip, you can exchange more.

Just having a credit card with a Visa logo is enough, you don't need to have euros. I just returned to China today, but remember to use the credit card lane at the toll booths on the highway. Other credit cards can be used for direct payment.
