If you only focus on Melbourne, Sydney and Adelaide, 10 days should be enough. There are Kangaroo Island, German Village and many wineries near Adelaide, depending on personal interests. It may take 3-4 days to visit all of them. Melbourne takes 1 day, Great Ocean Road takes 3 days, and Sydney takes about 1-2 days in total. It's more or less like this.
