On the expressway, it's written 100, but I see everyone driving 120... When overtaking, they ask if it's almost 130... So, how fast is speeding exactly ?

You see a road with a speed limit of 100, it means there is a speed limit. If there is no sign, the speed can be up to 120.

There is an unwritten rule in Europe that it's okay to exceed 10%, but for those who are unfamiliar with the outside world, it's best to follow the regulations for safety. If you occasionally lose control and exceed a few kilometers, it's not a big problem.

Absolutely follow the rules. The different speed limits on the expressway are very clear, at least from Geneva, Lausanne to Chillon Castle. The cars around me also follow the rules.
