Both are okay, but I feel that the second route will be better. But it will be a bit tiring to go to the west coast the first day of Road trip, as there are many mountain roads over there.

Christchurch to Greymouth has a scenic train. I've done it before and it's great. You can return the car at a different location. One round trip train every day departs Christchurch in the morning and returns to Greymouth in the afternoon.
