As long as you can afford the price or tolerate a little worse accommodation, you should still be able to find it.

Outside the city it's either really expensive or fully booked.

The southern part, especially near Vik, is not easy to find, and it's also difficult to make last-minute bookings in Húsavík. The capital and Akureyri are okay, I just made a last-minute change for accommodation in Akureyri.
