Just asking everyone, do you need to leave tips when renting a car, eating, and staying in hotels in Greece ?

Not mandatory, it's up to you and your mood. If you don't want to give, it's fine. Greeks are much more sincere than Italians. I usually don't give change, usually no more than 5, and no more than 10 at most. I usually give to hardworking porters (many hotels have steep stairs) and restaurants where I have a good chat. A barbecue restaurant in Olympia took me to buy medicine on their motorcycle. I didn't stay at any really good hotels. Greek hotels are usually non-chain hotels with prices around 1,000 yuan per night, but they are more expensive on Santorini.
