I would like to ask, 5 adults + 1 child (3 years old) with 2 large suitcases and 3 small suitcases, what kind of car model is better to choose, going on the Great Ocean Road, please help ?

This estimate is for a minivan.

Either two sedans or an MPV. If possible, an SUV is better than a sedan.

Last time I went to Great Ocean Road, 6 adults and 2 children rented a Hyundai Max1. The space is very large, with 3 large suitcases and 3 medium suitcases, which is more than enough. However, driving on mountain roads is a bit tough.

7-seater MPVs like the Hyundai iMax, the Kia Carnival can do, or you can rent two Toyota Corollas, cheaper than renting an MPV, and it's more comfortable for two or three people to drive a car than for several people to squeeze in.
